Turkey day may officially be over, but many of us have multiple gatherings. Make your weekend a bit easier by bringing your own healthy dessert! This is a great option through the rest of the fall season and even into winter!

- 3 cups oat flour – simply blend oats in a food processor
- 1 cup pureed pumpkin
- 2/3 cup Splenda, plus more for coating
- 2/3 cup coconut oil, melted
- 4 scoops cinnamon
- 1 egg
- 1/4 cup sugar-free syrup
- 1 tsp. vanilla
- 1 tsp. baking powder
- 1 tsp. pumpkin pie spice
- 1 tsp. cinnamon, plus more for coating
Preheat to 350. Mix together all ingredients. Dough will be sticky. Fridge 1 hr. Roll into balls. Combine extra cinnamon/Splenda and roll balls to coat. Bake 8-10 min. Whole recipe contains 6 carb/fat/protein servings. Consider adding more pumpkin to replace some or all of the oil to decrease fats. I made ¼ recipe with 18 tiny balls. Try flattening for crispier cookie.
