Friendly Feasting: Berrylicious Microwave Minute Muffin

Need a fast breakfast? Look no further – this super simple recipe will take you no more than three minutes to prep and make.

In a mug (how easy is that?!), mix:

  • ¼ cup quick oats
  • 1 egg
  • ¼ cup of blueberries
  • 1 Tbsp almond milk
  • Bit of Splenda/Stevia

Microwave 1 min – watch that it doesn’t overflow. If top doesn’t look firm, microwave another 30 sec. When done, flip upside down on a plate. 1 carb or double the recipe for Level 2, Day 1’s 2-carb meal.

I found this to be rather eggy. I would try doubling the recipe for that 2-carb meal but still using just one egg. Consider adding cinnamon, a bit of vanilla extract, or other flavor enhancer! Feast fast, feast from the microwave, and as always…FEAST ON!!!
