Friendly Feasting: Finnish Cardamom Cookies

The holidays approach and what is more traditional than a tray of Christmas cookies? Oftentimes, people gravitate toward baking what they always ate growing up or a recipe from their heritage. Any Finns out there? I came across this cookie recipe a couple of years ago during a “what’s-this-cardamom-spice-and-how-many-recipes-can-I-use-it-in” phase!

• ½ cup almond flour
• 1/8 tsp baking soda
• ½ tsp cinnamon
• ½ tsp cardamom
• ½ egg
• 2+ Tbsp Splenda
• ¼ cup coconut oil
Mix flour, baking soda, cinnamon, and cardamom in a large bowl. In another, beat egg till frothy. Beat sugar and oil into egg; mix well. Add wet to dry and mix until batter is smooth. Drop by teaspoonfuls onto greased and floured cookie sheet (or parchment paper). Bake 10-12 min at 350 degrees. Makes 4 fat servings.

Enjoy a new, but healthy, addition to your 2015 holiday cookie tray! Think of eating one of these instead of an unapproved cookie as 25 less burpees you have to do! Feast friendly, feast Finnish, and as always…FEAST ON!!!
